Apple crumble

Cooking time: overnight for apples + 40 mins for crumble
Who says you can’t have dessert for breakfast!? 😊 Apple crumble makes for a delicious breakkie or dessert. One tray will make 3 meals for 2 and I’ll freeze the other tray. Perfect with a scoop of Greek yoghurt or ricotta cheese.

Recipe:
- Chop up 6 -8 apples 🍎 🍏 into small pieces (can use 🍐 pears too, or a mix of both)
- Add to a slow cooker (or heavy based pot)
- Add spices: 4 cloves, 2 tsp cinnamon, 1 tsp grated nutmeg.
- Add 8-10 prunes or 1/2 cup sultanas
- Add juice of 2 oranges or 1/2 cup water.
- Slow cook overnight or cook in the heavy based pan on the stovetop for 20mins 🕑 or longer until the apples are smooshy.
- Place apples in a baking dish or two if you have small ones like these.
Top with crumble:
Mix in a bowl:
- 1 1/2 cups oats
- 1/2 cup desiccated coconut 🥥
- 1/4 cup brown sugar/coconut sugar
- 1/2 cup spelt flour
- 1/2 tsp cinnamon
- 1tsp vanilla extract
- 60g unsalted butter 🧈 . Cut into cubes and soften by placing in a bowl in the oven for a minute or so or use 1/4 cup olive oil or coconut oil instead.
- Mix this all in with your hands so the butter binds all the goodness together.
- Spread the crumble on top of the apple mix.
- Bake at 160 degrees fan forced for 30-40mins.
