Apricot cashew chews
(Makes 20)







Ingredients

  • 1 cup dried apricots
  • 1 cup cashews
  • 1/4 cup pumpkin seeds
  • 1 Tbs coconut oil
  • 1 tsp cinnamon
  • 1 Tbs tahini
  • 1/3 cup dessicated coconut
Method
  1. Blend nuts in a food processor until a bread crumb like consistency. 
  2. Add remaining ingredients (except dessicated coconut) into the food processor and blend until the mixture starts to come together.
  3. Roll mixture into bite size balls and roll into dessicated coconut.
Refrigerate. You can also freeze.
