Pumpkin and chorizo soup

Cooking time: 30 mins
1 butternut pumpkin (chopped into cubes)
1/2 chorizo stick (100g) diced
1 tsp paprika
2 cloves garlic
1 tbs curry powder
olive oil/coconut oil
1 stock cube
1/2 red chilli finely chopped
2 tsp chopped parsley
Heat oil in a heavy based pot
Add onion, pumpkin, garlic, chorizo, carrot, curry powder, paprika, chilli. Cook for 10mins until starts to soften. Add water if too dry
Add stock cube to a jug of 750ml boiling water, then add to pot.
Bring to boil then simmer for 15mins.
Use a stick blender to moosh it up
Serve with a sprinkle of chopped parsley or paprika.
