Pumpkin and chorizo soup

Serves: 2
Prep time: 15mins
Cooking time: 30 mins

Ingredients

  • 1 butternut pumpkin (chopped into cubes)
  • 1/2 chorizo stick (100g) diced
  • 1 tsp paprika
  • 2 cloves garlic
  • 1 onion
  • 1 carrot
  • 1 tbs curry powder
  • olive oil/coconut oil
  • 1 stock cube
  • 1/2 red chilli finely chopped
  • 2 tsp chopped parsley
  • 750ml water

Method
  1.  Heat oil in a heavy based pot
  2. Add onion, pumpkin, garlic, chorizo, carrot, curry powder, paprika, chilli. Cook for 10mins until starts to soften. Add water if too dry
  3. Add stock cube to a jug of 750ml boiling water, then add to pot.
  4. Bring to boil then simmer for 15mins.
  5. Use a stick blender to moosh it up
  6. Serve with a sprinkle of chopped parsley or paprika.
