Crunchy Muesli

I love working out ways to make things you normally buy at the supermarket... Muesli is one of those. It's super easy and when you make it yourself, you know exactly what's going in. I like it topped with almond milk. Add a dollop of full fat greek style yoghurt for a protein packed breakkie.You can also soak this overnight in milk or yoghurt for a bircher style muesli. Make it gluten free… use soaked buckwheat groats and flaked quinoa instead of oats.

Ingredients
- 5 cups rolled oats
- 1 cup dried fruit (apricots/dates/goji berries/sultanas) chopped
- 1/2 cup nuts (almonds/cashews) chopped
- 1/2 cup seeds (pumpkin/sunflower)
- 1/4 cup chia seeds
- 2 tsp cinnamon
- 1 tsp vanilla essence
- 1/3 cup desiccated coconut
- 3 Tbs coconut oil (will be solid at room temperature so you can melt it first)
- 2 Tbs maple syrup or honey
Method
- Chop nuts in a food processor
- Melt maple syrup/honey and coconut oil in a small pot on the stove.
- Mix chopped nuts, seeds, oats, desiccated coconut, cinnamon and vanilla in a bowl.
- Spread mixture over an oven dish, drizzle over melted maple syrup and coconut oil and bake at 180 degrees for 20mins
- Mix around so bottom of mixture gets a turn at being at the top
- Place back in oven for a further 10mins until crunchy
- Remove from oven and stir in dried fruits.
- Allow to cool and store in an air tight container in the cupboard for 3 weeks. Or in refrigerator for up to 2 months.
