Ingredients
- 3 free range eggs
- 1 cup spinach ( cut into 10cm lengths)
- 1 rasher of ethical bacon (diced)
- 1 Tbs olive oil
- 1/2 cup grated cheddar cheese
- 1/2 onion (diced)
- salt and pepper for seasoning
- 1 frying pan
- knife
- whisk
- Heat oil in pan
- Add onion and bacon to pan and cook for 4-5 minutes until onions are clear
- Add spinach
- Whisk eggs, season with salt and pepper and add into pan
- When the omelette begins to firm up ( after about 5 mins) sprinkle over the grated cheese
- Slide a spatula around the edges of the omelette and fold omelette in half.
- Remove from the pan, cut in half and serve on a plate.
