Omelette
Serves: 2

Ingredients
  • 3 free range eggs
  • 1 cup spinach ( cut into 10cm lengths)
  • 1 rasher of ethical bacon (diced)
  • 1 Tbs olive oil
  • 1/2 cup grated cheddar cheese
  • 1/2 onion (diced)
  • salt and pepper for seasoning
Equipment
  • 1 frying pan
  • knife
  • whisk
Method
  1. Heat oil in pan
  2. Add onion and bacon to pan and cook for 4-5 minutes until onions are clear
  3. Add spinach 
  4. Whisk eggs, season with salt and pepper and add into pan
  5. When the omelette begins to firm up ( after about 5 mins) sprinkle over the grated cheese
  6. Slide a spatula around the edges of the omelette and fold omelette in half. 
  7. Remove from the pan, cut in half and serve on a plate.
