Pesto
Ingredients
- 2 bunches of coriander leaves,
plus basil/parsley/watercress really anything
green! - 1 cup cashews
- ½ cup olive oil
- 1 tsp salt
- ¼ cup feta cheese (optional)
Method
- Roast cashews in oven at 180 ºC for 10mins
- Allow to cool, then blend in a food processor until consistency of breadcrumbs
- Add greens and salt and blend
- Optional – add feta cheese and blend
- If you need to add more liquid, slowly drizzle olive oil in with the food processor running.
