Pesto

Ingredients

  • 2 bunches of coriander leaves,
    plus basil/parsley/watercress really anything
    green!
  • 1 cup cashews
  • ½ cup olive oil
  • 1 tsp salt
  • ¼ cup feta cheese (optional)

Method
  1. Roast cashews in oven at 180 ºC for 10mins
  2. Allow to cool, then blend in a food processor until consistency of breadcrumbs
  3. Add greens and salt and blend
  4. Optional – add feta cheese and blend
  5. If you need to add more liquid, slowly drizzle olive oil in with the food processor running.
Store in the fridge for up to a month. Can also be frozen.
