Poached eggs and avo on toast

Ingredients
- 2 eggs
- A fry pan filled just below the brim with water
- 1/2 avocado sliced
- 2 pieces of rye/sourdough toast
- 1 Tbs white vinegar
- 60g (1/2 cup) smooshed fetta cheese
- salt and pepper to season
Method
- Bring the water in the pan to a simmer
- Meanwhile, prepare the toast, add on smooshed fetta cheese and sliced avocado
- Add 1 Tbs white vinegar to the water in the pan
- Crack the eggs into a glass
- Swirl the water in a clockwise motion using a wooden spoon
- Slide the eggs into the pan and keep at a simmering for 5-6 mins or until all the egg white is cooked.
- Using a slotted spoon, gently lift the eggs out and place on toast
- Season with salt and pepper
