Poached eggs and avo on toast

Serves: 2
Prep time: 10mins
Cooking time: 10 mins
Ingredients
  • 2 eggs
  • A fry pan filled just below the brim with water
  • 1/2 avocado sliced
  • 2 pieces of rye/sourdough toast
  • 1 Tbs white vinegar
  • 60g (1/2 cup) smooshed fetta cheese
  • salt and pepper to season
Method
  1. Bring the water in the pan to a simmer
  2. Meanwhile, prepare the toast, add on smooshed fetta cheese and sliced avocado
  3. Add 1 Tbs white vinegar to the water in the pan
  4. Crack the eggs into a glass
  5. Swirl the water in a clockwise motion using a wooden spoon
  6. Slide the eggs into the pan and keep at a simmering for 5-6 mins or until all the egg white is cooked.
  7. Using a slotted spoon, gently lift the eggs out and place on toast 
  8. Season with salt and pepper
