Ingredients
2 beetroots
½ cup chopped walnuts
3 cups watercress leaves (or fancy lettuce)
½ cup crumbly feta cheese
1 Tbs olive oil
Method
Chop
beetroot
into bite size chunks, drizzle
olive oil
over the top and place in 180ºC oven for 40mins
Dry fry
walnuts
on the stove in a pan until crispy (about 7 mins)
Throw
watercress
in bowl and add
roasted beetroot
on top
Sprinkle over
feta cheese
and finish with toasted
walnuts
Creamy tahini dressing
Ingredients
1.5 Tbs tahini (sesame seed paste)
3 Tbs full fat greek yoghurt
Juice of 1 lemon
1tsp wholegrain mustard
1tbs olive oil
1 garlic clove grated
¼ tsp salt
Method
1. Mix
all ingredients
together in a jar and shake.
2. Pour dressing over salad.
