Salmon quiche on quinoa base

Makes 8 slices
Prep time: 20mins
Cook time: 35mins
Quiches are great - they're one of the only meals I know that you can eat for a brekkie, lunch or dinner. Super easy to make and delicious!

Ingredients
Base:
  • 1 cup quinoa
  • 2 cups chicken stock/water
  • 1/4 cup chopped chives
  • 1 egg
Filling
  • 6 eggs
  • ½ cup milk
  • 1 cup chopped mushroom
  • 1-2 cups of any vegetables you have (e.g. left over roasted carrots, fennel) or spinach.
  • 200g smoked salmon
  • ¼ cup chives
  • Pinch of salt
Method
Base:
1.    Rinse quinoa. In a saucepan, bring quinoa and chicken stock to the boil. Dial it back to a simmer for 10-15 minutes until quinoa is translucent.
2.    Add in chives and allow to cool.
3.    Mix in one egg
4.    Spread mixture on a quiche base including up the sides and bake at 180ºC for 15mins or until slightly brown.

Filling
  1. Layer salmon, mushroom, other vegetables and chives on base
  2. Whisk eggs, milk and salt and pour over vegetables
  3. Cook at 180ºC for 20mins or until egg mixture is cooked through and top is lightly browned.
