Ingredients
2 small fillets of salmon
1/2 cup jasmine rice
1/2 cup coconut cream/milk
1/2 cup water
2 medium zucchinis (
sprialised
)
10 green beans
pinch of salt
Method
Place salmon fillets on a baking tray and drizzle with olive oil.
Place salmon in a 180 degrees oven (fan forced) and cook for 15 minutes or until just slightly still pink in the middle.
Just before the salmon is cooked, add the green beans to the baking tray.
Place rice in a medium saucepan. Add coconut cream and 1/2 cup water.
Bring rice to the boil and then simmer for 10mins or until all liquid has been absorbed.
Place the rice on a plate and top with half of the zucchini.
Flake the salmon (use a fork and break it up) and place on top
Place the green beans on top and serve.
