Choc bliss balls

 (makes 20)
 Ingredients
  • 1 cup pitted medjool dates or soaked dried dates*
  • 1 cup almonds
  • 1/4 cup raw organic cacao powder
  • 1 tbs coconut oil or 1/4 cup of date soak water
  • 1 tbs raw cacao nibs (optional)
  • 1 tsp vanilla
  • 1 Tbs nut butter (ABC or peanut)
  • 1 tsp cinnamon
  • pinch of salt
  • ½ cup desiccated coconut
  • 1 Tbs tahini
  • 2 tsp maca powder (optional)
 Method
  1. Blend almonds in a food processor for about 5 mins until breadcrumb consistency.
  2. Add the rest of the ingredients except the dates and date soak water, and blend
  3. Add dates and blend until mixture starts to come together
  4. Add date soak water/coconut oil and blend until the consistency is like a fudgy paste.
  5. Roll mixture into bite size balls and roll in desiccated coconut.
*If you use dried dates, soak them in hot water for 5-10 minutes to soften, then drain. Keep some of the water to use to adjust bliss ball consistency.
This will ensure your bliss balls bind together.

Refrigerate. Can also be frozen.
